Health Coach Tip - Eat the Whole Egg
An often asked question at Eleven Eleven Wellness Center is, “Is it ok to eat the whole egg - whites and yolk?” Our answer is YES! The yolk and the white of the egg have different properties and when eaten together they are protein and nutrient rich powerhouses!
Top Nutrients in Eggs
Protein, B1, B2, B3, B5, B6, B12, choline, biotin, folate, iodine, magnesium, potassium, sodium, and selenium
Which nutrients are specific to the egg yolk?
Omega 3 fats, vitamins A/D/K/E, calcium, phosphorus, zinc, copper, iron, and caroteniods.
Ideally look for pasture raised eggs. When chickens are able to peck in a pasture their egg yolk will be a beautiful rich yellow or orange color, the difference is notable from a pale factory farmed egg. An easy pasture raised brand to find in stores is Vital Farms.
The top follow up question to eating the whole egg is always, “How many eggs can I eat each week?” While eggs have been villainized for decades because they are high in cholesterol, it turns out the eating eggs does not adversely affect cholesterol for most people. So enjoy!
