Recipe – Mediterranean Cauliflower Salad

Ingredients
For the Salad
- 1 medium head of cauliflower, cut into small florets
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup pitted Kalamata olives, halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint leaves
For the Dressing
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Then, line your baking sheet with parchment paper.
- Place the cauliflower florets onto your baking sheet. Next, drizzle the florets with olive oil and add your salt and pepper. Toss to coat evenly. You’ll roast this for about 20-25 minutes, or until the cauliflower is tender and lightly browned.
- Remove from the oven and set aside to cool.
- In a large mixing bowl, you can now combine your roasted cauliflower, cherry tomatoes, cucumber, and red onion, with your olives, feta cheese, parsley, and mint leaves.
- In a separate small bowl, take a whisk to your olive oil, lemon juice, minced garlic, Dijon mustard, dried oregano, salt, and pepper. Seasonings can be adjusted, to your taste.
- Next, simply pour the dressing over the salad mixture and toss until everything is evenly coated.
- Refrigerate your salad for 30 minutes before serving, this will help flavors fuse.
- Finally, serve chilled and enjoy!
