It’s no surprise that almost everyone needs to eat more vegetables. They are the foundation of a healthy diet, but it’s not always easy to fit them in. One favorite way to get more veggies into the day is to start first thing in the morning with breakfast salad! I bet you are wondering what a breakfast salad is? It’s a salad with a breakfast twist… the egg!

Here’s how to build the perfect breakfast salad:

Start with greens

The base for the breakfast salad is… greens! Use raw greens like spinach, romaine, or arugula or use up sauteed leftovers from the night before - kale, collards, chard. To make this quick and easy, buy pre-washed organic greens so you are ready to go.

Add more vegetables

Once you have your base of greens, add more veggies! Carrots, peppers, tomatoes, onions... maybe some fermented vegetables like sauerkraut. What else have you got in the fridge? Prep your veggies on the weekend so they are ready to throw into your morning salad.

Add healthy fats

Avocado, nuts or seeds, goat cheese, and an olive oil based dressing will add some flavor and healthy fats to start your day.

Put an Egg on It

Eggs are a classic breakfast favorite, a great protein source, and loaded with nutrients. Make them sunny side up, hard boiled, or poached and place on top of your salad. Eat up!
